Tomatillo-Avocado Salsa

1 1/2 pounds fresh tomatillos (about 12-14 medium) soaked in warm water and husked. (i usually soak for 15 min)

1 med. white onion, diced
2 garlic cloves, minced
2-3 fresh serrano chiles to taste, minced
1/2 cup coarsely chopped fresh cilantro
1 large ripe avocado
juice from 2-3 limes, plus more to taste
salt to taste (i like coarse salt)
sugar to taste
Extra virgin olive oil to taste (i don't use, or if i do, just very little)

Quarter the tomatillos and place in a food processor. Pulse to a coarse puree.

Place the tomatillos, onion, garlic, chiles, and cilantro in a bowl and stir to combine. Cut the avocado in half length wise, remove the pit, cube, and add to the tomatillos. Season with lime juice, salt, sugar, and drizzles of olive oil. let stand 20 min. taste and adjust seasonings.

I usually double it for family functions, so i juice 3 limes, and then add 1/4 cup lime juice (the good key lime stuff).
